Crepes

I will never forget Rebecca and Aaron "slaving away through the night" to make us crepes! This is our favorite recipe for crepes, and they disappear almost faster than you can cook them!

Makes 24 - 26 crepes

1 1/2 c. flour
1 tsp. sugar
1/8 tsp. salt
3 eggs
1 1/2 c. milk
2 TB. vegetable oil

Mix all ingredients THOROUGHLY, preferably in a blender. The consistency of the batter should be as thin as heavy cream. Heat a crepe pan over medium heat. Spray pan with cooking spray before cooking each crepe. Pour in about 3 TB. batter, and immediately tilt the pan in all directions, swirling the batter so it covers the bottom of the pan in a very thin layer. Cook crepe 'til bottom is lightly browned. Carefully turn the crepe with a spatula and brown the other side for a few seconds. Remove from pan and stack cooked crepes on a serving plate.
