I found this on the back of a package of rice, it's so good and even better the next day!
1 lb ground beef (also works well with ground turkey)
1 chopped onion
1 minced garlic clove
1/2 t red pepper flakes
2 thinly sliced carrots (I also use year supply dried carrots, or chop 10-15 baby carrots in my Pamperd Chef chopper)
1 C rice (I like Jasmine rice, don't use instant)
2 T soy sauce
1/3 C chopped fresh mint
1/3 C chopped cilantro
1 1/2 C water
Method:
Brown mean, onions, garlic, carrots and red pepper in a bit of oil. When the meat is brown, add in rice, water and soy sauce. Bring to a boil and let simmoer till liquid is absorbed and the rice is soft. Add more water if needed. Right before serving mix in mint and cilantro. Let stand 10 mins before serving.

My good friend, Chris, sent me these recipes awhile ago in an email...This rice tastes just like the REAL thing and is a hit with my family!
3 c. water
4 tsp. powdered chicken bullion
4 tsp. minced garlic
1/2 bunch cilantro
1 can green chiles (optional)
3/4 tsp. salt
1 TB. butter
1/2 onion
3 c. rice
Blend cilantro, green chiles, and onion together in food processor. Bring water to a boil and add all ingredients. Cover and simmer until rice is done.
