Natalie’s Egg SoufflĂ©


1 cup shredded Cheddar cheese

8 eggs, whisked

6 slices turkey bacon/or ham diced

3 slices bread, cubed

1 red/orange/yellow bell pepper, diced

2 green onions, chopped OR 1/2 yellow onion, diced

1/4 C milk or half n half

3 cloves garlic, minced

1 tsp salt salt 

ground black pepper to taste


Preheat oven to 375° F. Grease a 9x13-inch baking dish. Stir Cheddar cheese, eggs, bacon, bread, bell pepper, onion, milk, garlic, salt, and black pepper together in a bowl until well-combined; pour into prepared baking dish. Top with additional shredded cheese. Bake in the preheated oven until eggs are set, 20 to 25 minutes.

Cheese Egg Puff

This is another of Mema's famous recipes, which she got when she and Grandpa were serving their mission in Washington, D.C. We served it at Alisa's Family Baby Shower, and it was a hit!

10 eggs
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. melted butter
1 pint small curd cottage cheese
3/4 lb. grated Monterey Jack cheese
1/3 lb. grated Swiss cheese
1 4 oz. can diced green chiles

Beat eggs till light and lemon color. Add flour, baking powder, and salt. Stir in cottage cheese. Fold in grated cheeses. Blend in melted butter. Stir in chiles. Pour in greased 9" x 13" pan. Bake at 350 degrees for 35 min., or until LIGHTLY brown and eggs no longer "jiggle."
