My MIL makes these waffles and they are the best waffles you will ever eat. She told me that one of my BILs doesn't like them, I think he is crazy. They are good for you and are low-fat...oh and they make a killer pancake as well!
Oatmeal Waffles
2 eggs
2 C buttermilk
1 C quick cooking oats
1 t oil
1 t molasses
1 C whole wheat flour (if you don't have this, white flour is fine)
1 t baking powder
1 t baking soda
1/2 t salt
Method:
Combine, eggs, buttermilk, oil and molasses**. Mix together and then add the flour, baking powder, baking soda, and salt. Mix all till blended. Batter will be lumpy. Measure out into a hot, greased waffle iron and cook as you normally would. Serve with syrup, jam, applesauce or honey. These also freeze well for later. If freezeing allow waffle to cool before putting in the freezer.
**Add the oil before the molasses and use the same spoon, this way the molasses will not stick to the spoon and make a mess.
