Butter a 9 x 13” pan. Set aside. In a 4-quart sauce pan, combine ingredients and bring to boil over medium heat – – stirring constantly with a wooden spoon. Stirring often, allow mixture to continue boiling, until it reaches 240°F or soft ball stage. Perform cold water test often, as mixture begins to darken into a golden caramel color. Drop a small spoonful of caramel into cold water. It is done when caramel forms a firm but pliable ball. Remove from heat and add 1 tsp vanilla. Pour into prepared pan and let set up. Cut into squares.
