German Pancakes

This is a favorite of Jospeh's for any meal.

6 eggs
1 C flour
1 C milk
1/2 t salk
4 T butter
1/4 C sugar
1 t vanilla

Method:

Heat oven to 400F and place a 9x13 glass pan on the bottom rack with the butter in it to melt. The bottom rack is very important--your pancakes will burn otherwise. Mix all remaining ingredients until smooth. Pour over melted butter to bake about 20 mins. Don't open the oven door while baking, this will cause your pancakes to fall. Serve with applesauce, syrup, jam or powered sugar. This also is very easy to half and cook in a 9" square pan.
